Poppy Seed Cake

3C. flour                               
1 1/2 tsp. salt
1 1/2 tsp. baking powder                                                              
3 eggs
1 1/2 c. milk
2 1/4 c. sugar                                                                             
1 1/8 c.oil
1 1/2 tsp poppy seeds
1 1/2 tsp. butter flavoring                                                                   
1 1/2 tsp.vanilla
1 1/2 tsp almond flavoring

Mix all ingredients with mixer.  Pour into greased and floured bundt cake pan.
Cook at 350 for 1 1/2 hours (convection 60 minutes)
Cool 5 minutes and pour frosting over cake while in pan. Cool additional 5 minutes then remove from pan.

Frosting:
1 sm. can frozen orange juice concentrate
1 c. sugar
1/2tsp. almond flavoring
1/2 tsp. butter flavoring
1/2 tsp. vanilla.






Red Onion Jam


3 red onions, halved and thinly sliced
1C. Red Wine
1Tsp. Sherry Vinegar                                                  
3/4 C. brown sugar
Salt& Pepper to taste



Heat a little oil in a sauce pot over medium heat.  Add the onions and sweat until tender and translucent.  Deglaze with red wine and reduce the wine by half.  Add the sherry vinegar and brown sugar.  Cook down to jam consistency.


German Hot Potato Salad


2 lbs Potatoes
salt
4-6 oz Bacon-more if you like
1 onion
1 tbs Butter                                                               
Beef broth
4 tbs vinegar/4 tbs oil
salt/pepper
parsley  





Cook potatoes in saltwater until done. Peel, slice and add to big bowl.
Dice bacon and onions. Heat butter in frying pan; add bacon and onions; fry for few minutes or until onions are glazed; pour bacon and onions over potatoes; add hot beef broth, oil and vinegar. Salt and pepper to taste. Might need to add extra beef broth and/or vinegar to taste. Last add chopped parsley.

Crockpot Breakfast


8 servings
1 (28 oz.) Bag Frozen Potatoes O'Brien, thawed slightly

1/2 Cup Diced Onion

1 Pound Lean Ham, diced

2 Cups Fat Free Shredded Cheddar Cheese

1 Cup Skim Milk

3 Cups Egg Substitute

1/2 teaspoon Salt

1 teaspoon Pepper
Spray crockpot with non-stick cooking spray. You will make three layers. Place 1/3 of the potatoes into the bottom of the crockpot, followed by 1/3 of the onions, 1/3 of the ham and 1/3 of the cheese. Repeat this step two more times ending with the layer of cheese. Beat together the egg substitute, milk, salt and pepper; pour it over the layers in the crockpot. Cover and cook on low for 9-10 hours overnight. Cut into 8 wedges when ready to serve.

Per Serving: 250 Calories; 3g Fat (10.9% calories from fat); 31g Protein; 22g Carbohydrate; 3g Dietary Fiber; 30mg Cholesterol; 1414mg Sodium. Exchanges: 0 Grain (Starch); 8 Lean Meat; 0 Vegetable; 0 Non-Fat Milk; 0 Fat.


Healthy chicken enchiladas

3 chicken breast

2 c salsa

cumin,chili powder

1 container greek Yogurt ( I prefer Dannon/Oikos)

6 corn tortillas,cut in strips

1 can LS chicken broth

1/2 cup Velveeta cubed,or 2 slices processed cheese (optional)

1 cup low far shredded cheese (mex blend,cheddar,etc)

set crock on low & add chicken breast(they can be frozen,even in a big clump),sprinkle w/ cumin & chili powder,add 1 cup salsa & 1/2 can chicken broth. Cook on low for 4-5 hrs. remove chicken & set aside-add remaining salsa,broth & Velveeta-turn on high until cheese melts. Shred chicken & add back to pot w/ 1/2 the tortilla strips & yogurt,mix well-then layer remaining strips on top of mixture-turn back to low & cook another 40 min,last 15 min add shredded cheese on top & allow to melt before serving. Enjoy!


Cajun Style Cabbage and Turkey Smoked Sausage

1 small head of green cabbage coarsely chopped

about 2 lbs of Turkey Smoked Sausage cut into 1/2 inch slices

1 med size onion coarsely chopped

2 small granny smith apples petite chopped

1/2 cup water

1/2 cup apple juice

1/2 tbs garlic powder

1 tbs cajun seasoning

2 tbs hot sauce

4 tbs apple cider vinegar

salt and pepper to taste



Add chopped cabbage into crock pot

on top of cabbage add onion and apple

add seasonings then hot sauce, vinegar, followed by water and apple juice

put sliced smoked sausage on top and let it do it's magic! =) yummo!!!





Amazing Pork Tenderloin in the Slow Cooker
Ingredients
1 (2 pound) pork tenderloin

1 envelope dry onion soup mix

1 cup water

1/2 cup white wine

3 Tbsp garlic, minced

3 Tbsp low sodium soy sauce

pepper to taste

Place pork tenderloin in the slow cooker with contents of soup packet.

Pour water, wine, and soy sauce over the top, turning the pork to coat.

Carefully spread garlic over the pork, leaving as much on top of the roast

during cooking as possible. Sprinkle with pepper, cover, and

cook on low setting for 4 hours. Serve with cooking liquid on the side as au jus.



Serves 8 For those who wish to avoid the soup mix packet, you can use about 3-4 tbsp. of onion powder as a healthier option.






Greek Inspired Slow Cooker Chicken
Total Time: 5 Hours

1 Lemon, Juiced

4 Garlic Cloves, Minced

1/4 Cup Olive Oil

1/2 Cup White Wine

1/4 Cup Chicken Broth

1 tsp Dill

1 tsp Rosemary

1 Tbsp Balsamic Vinegar

1/4 tsp Pepper

1/2 tsp Salt

1 Whole Chicken, Broken into it's Respective Pieces

Directions:

Cook on low for 6 to 8 hours or on high for 4 to 6 hours.

Serve over noodles with sauce from the slow cooker spooned over the noodles and a little feta and olives for good measure.

If you don't have apple juice on hand you can just use 1 cup of water

and the cajun seasoning is not a must but adds a slight kick!
